GFCF Beef and Bean Burritos

This is another recipe adapted from thepioneerwoman.com-if you haven’t figured it out already, I absolutely lover her recipes. She has several gfcf friendly dinners that I frequently make. One of which is her cranberry pork loin if you want to check it out.

I love this recipe because I can make it -start to finish- in under 30 minutes! Plus, they are filling and very tasty. My husband even said these were the best burritos he’s ever eaten-and believe me he’s eaten plenty of burritos :)

GFCF Beef and Bean Burritos
 
Ingredients
  • 2 pounds ground beef, preferably grass fed
  • 1 onion, chopped
  • 1 can red enchilada sauce
  • 1 clove garlic, minced
  • ½ tsp salt, to taste
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tsp oregano
  • olive oil
  • corn tortillas or my grain free tortillas (see above)
  • cilantro leaves
  • 1 can (28 oz.) refried beans
  • ¼ C Salsa, optional
  • 2 squares Tofutti american cheese, optional
  • diced tomatoes
Instructions
  1. Brown together the beef, onion, and garlic.
  2. Drain off the fat.
  3. Add in the enchilada sauce, salt, cumin, oregano, and chili powder. Taste and adjust seasonings as desired. Reduce to low and let simmer while you finish dinner.
  4. Heat the beans in a small saucepan, and grate in 2 squares of the cheese and the salsa. Stir until heated through and cheese is melted, if using. Set aside.
  5. In a small skillet, heat about 1 tbsp olive oil and then add in 1 tortilla. Heat for just about 30 seconds to 1 minute per side or just until soft, set aside on a plate. Repeat this step until all the tortillas are heated.
  6. Spread on the warm beans, then the yummy meat on a tortilla.
  7. Wrap the burrito around the filling and turn over so the seam is on the plate.
  8. Spoon some of the yummy meat mixture on top along with queso, if using, then garnish with cilantro and tomatoes. Then, I usually give mine a good sprinkle of salt. mmmmm.....
