This snack idea is so easy that I almost didn’t even post it. It’s probably something totally stupid to post because maybe everyone does this… but eating sweet potatoes for a snack was new to me. I’ve always thought of sweet potatoes only as a side dish. When I make them I usually go the whole 9 yards and make some fancy smashed sweet potato recipe.
But every time we go to visit my grandma my kids immediately say “I’m hungry, I’m hungry” – regardless if they really are or not. And most of the time she just heats up a sweet potato for them and they love it!
So in imitation of my grandma, I started keeping baked sweet potatoes in my fridge. Now when my kids come home from school saying “I’m hungry, I’m hungry” I just heat up a sweet potato… and I feel awfully good about myself for feeding them something so healthy.
- 6 - 8 sweet potatoes
- Preheat oven to 350 degrees.
- Wash your sweet potatoes then place them on a foil lined cookie sheet and pierce each potato 2 or 3 times with a sharp knife.
- Bake 45 minutes to an hour, or until a knife can be inserted easily.
