Weekly Paleo Meal Plan 3-8-2017

*For those of you who don’t follow me on Social Media, I want to let you know that I’ve found a few tricks to give my chocolate chip cookies a slight crunch on the outside with a chewier center and I updated the recipe 🙂 Click HERE for the recipe!

So, this past week or two hasn’t been all that great. Lance has been home sick since last Monday, and after trying really hard to treat him with natural treatments and essential oils and him not getting better I ended up having to put him on antibiotics – feels like I’m undoing everything I’ve been working so hard to do to heal his gut! But he is finally starting to feel better and I put him on some really good probiotics. Everything I’ve read says that fermented food, cultured food, and kefir are the best things (along with probiotics) after being on antibiotics. I don’t think the fermented food will be a go in my family but I might be able to find some non dairy cultured milk or kefir that I could incorporate into smoothies but I’m not sure, I’m going to look into it. I’ll keep you updated if I find anything that tastes good and my family likes! Moving on to what you came here for, the meal plan.

This week we are eating out twice, which is unusual, and I only planned easy meals. I’m hoping to make some chicken strips for school lunches on Monday and I have a few snacks or desserts I might make during the week if I feel up to it, but I plan on mainly serving melons and fruit without a lot of cooking.

 

Dinners:

Wednesday- Wings with Ranch Dressing or Egg Free Ranch with Veggies

Thursday- Polynesian Stir Fry

Friday- Glazed Salmon With White Rice or Cauliflower rice -replace soy sauce with coconut aminos and use ghee instead of butter.

Saturday- We will be gone all day so we will probably go out for dinner

Sunday- We are going out for dinner again!

Monday- Unstuffed Cabbage Roll

Tuesday- Cilantro Lime Chicken With Avocado and Tomato Salsa with Roasted Squash & Zucchini

 

Lunches (main dish only):

*I’m going to have some time on Monday so I plan on making Chicken Strips to keep in the freezer for lunches (and update my picture and recipe) 

Thursday- Salads with Leftover Wings and Ranch Dressing from the night before

Friday- Almond Flour Crackers With Nitrate Free Turkey and Pepperoni’s

Monday- Salads With Shredded Chicken and Vinaigrette Dressing

Tuesday- Chicken Strips

Wednesday- Lettuce Wrapped BLT Sandwiches with leftover Ranch or Egg Free Ranch (tutorial to come, or use Paleo Tortillas)

 

Extras and After School Snacks:

Ultimate Breakfast Smoothie

Baked Sweet Potatoes

Celery or Apples With Almond Butter

Trail Mix – A mixture of any nuts (except peanuts) and seeds, Enjoy Life dairy free chocolate chips, and dried cranberries

Lemon Meltaways

Melons and Fruit

Ranger Breakfast Cookies {Paleo & Nut Free} – never made these last week, going to try using a “Flax Egg”
