Hi everyone! This weeks meals are going to be extremely simple because we are going to be busy prepping for vacation next week! We’re going to visit some good friends in California and take the kids to Disneyland and we are so excited! Well, most of us are excited. Lance says that he is absolutely not going because he’s afraid to fly. We just keep talking about Disneyland hoping that he’ll want to go so bad he’ll be OK with flying, I guess we will just have to wait and see how he does once we get to the airport!
And since we will be gone I won’t have a new meal plan for the next 2 weeks – sorry! And don’t worry, I won’t blow up your Instagram feed – I’ll just post a few pics here and there 🙂 Here’s this weeks meal plan:
Thursday- Orange Marmalade Pork Tenderloin with side salad or roasted veggies
Friday- Beef Enchiladas with Cassava Flour Tortillas or Almond Flour Tortillas and I’m going to try THIS enchilada sauce recipe instead of store bought and use tapioca flour for the gluten free flour.
Sunday- We’re going out
Monday- Simple Hamburgers with Quick & Easy Paleo Hamburger Buns
Tuesday- Honey Glazed Salmon with rice or cauliflower rice (use ghee instead of butter and gluten free soy sauce or coconut aminos)
Snacks & Extras:
Pancakes – I’m going to attempt to make them egg free – we’ll see how it goes!!!
