This week’s gluten free meal plan is smaller than normal because the kids get out of school this week – YAY! That means I won’t have to pack school lunches every night and there will be no more “School Lunches” section for awhile, I’m so excited!! And since Lance is being home-schooled anyways it will be nice to have Ava home too and have a more relaxed schedule.
Also, we are going to be gone for the weekend so I don’t have any meals planned for Fri, Sat, or Sun – sorry! If you need some extra ideas you can always look back at past meal plans 🙂
I don’t know if you noticed, but the past few meal plans have also been egg free. Even though we aren’t totally egg free, we are slowly transitioning that way because I don’t feel very well when I eat eggs and I don’t think Lance does either. Plus, I’ve been having lots of requests for egg free recipes. Let me tell you – egg free baking is HARD! I feel like I’m learning to cook all over again! If you want to keep up with some of my egg-free baking experiments (or more accurate, baking fails!) and recipe testing I’m going to start posting them on Instagram 🙂
Here’s this weeks meal plan:
Thursday- 2 Whole Roasted Chickens With Roasted Veggies (One for dinner, the other for salads throughout the week)
Friday/Saturday/Sunday – We will be gone
Tuesday- Polynesian Stir Fry
Snacks and Extras:
No-Bake Brownie Bites – Going to make them with coconut flour and sunflower seed butter to be nut free – we’ll see how it goes!
Sour Cream – For the ranch dressing and for a dip
