Weekly Meal Plan {Paleo & Egg Free}

Hi everyone, I hope you are having a great week so far! If you read my meal plan last week you know that our son Lance hasn’t been doing all that great in school. The past two weeks we’ve basically been doing a home school program with him through the public school systems and it seems to be working better. Even though it’s harder for us, we think he is doing better and learning more than he was at public school. There’s not a lot of school left this year so we will finish out the year with the home school program, then we will have all summer to decide what we will do next year.

For dinners this week I’m kind of all over the map. We are having Mexican, American, Italian, some summertime dishes, and then I threw in spaghetti squash bolognese which is a colder weather type dish. I guess I’m all confused because the weather has been so crazy. One day it’s hot and sunny then the next day (like today) it’s cold and windy and all I want is comfort food.  So here is my totally random meal plan this week:

Dinners:

Wednesday- Crispy Baked Chicken Wings with veggies and Homemade Ranch or Egg Free Ranch

Thursday- Chicken Taco Salad

Friday- Shrimp Tacos with Paleo Tortillas or Cassava Flour Tortillas for nut and egg free

Saturday-Chicken Piccata with either Zucchini Noodles or Roasted Veggies

Sunday- Pizza

Monday- Spaghetti Squash Bolognese

Tuesday- Bacon Wrapped Chicken Strips with a side salad

 

School Lunches (Main Dish Only):

Thursday-Salads with leftover Wings and Ranch Dressing

Friday- No School

Monday- Leftover Pizza

Tuesday- Lettuce Wrapped Sandwiches

Wednesday- Leftover Bacon Wrapped Chicken Strips

 

Snacks & Extras:

Paleo Brownies {Nut & Egg Free}

Fruit and Berries With Coconut Whipped Cream (recipe to come)

Breakfast Smoothie

Mojito Smoothie – So excited to make this now that I have mint growing!!!
