Weekly Meal Plan 7-26-17

Since it’s so hot outside and it’s almost back to school time I want to be spending as much time with the kiddos as possible and not in the hot kitchen cooking. I imagine most people are feeling the same right now so I tried to plan a variety of tasty dinners that don’t require an oven (except for Wednesday Wing Night of coarse!) or a lot of hands on time. Here’s what I have planned:

Dinners:

Wednesday- Wings with Ranch and Chopped Veggies

Thursday- Going out

Friday-  Asian Chopped Salad

Saturday- Shredded Beef Tacos {crock pot} with Almond Flour Tortillas, Cassava Flour Tortillas, or Siete Tortillas

Sunday- Pork Chops With Pineapple Salsa and Roasted Asparagus with Squash

Monday- Spaghetti with Rice Noodles or Zucchini Noodles (never made this from last week)

Tuesday- Honey Soy Salmon with rice (use gluten free soy sauce or coconut aminos and non-dairy butter or ghee)

 

Snacks & Desserts:

I’m still working on an egg free lemon bar recipe!

Chocolate Chip Zucchini Muffins to use up all the fresh zucchini growing wild right now!
