Even though we are not going vegan, we are still trying to reduce the amount of meat that we eat and increase our fiber and plant-based foods. So this week I have two vegan recipes planned, plus Tuesday and Thursday could easily be made vegan as well 🙂 Here’s my plan this week:
Thursday- Chicken Taco Stuffed Baked Potatoes – I’m going to put all of the toppings from my Chicken Taco Salad onto a baked potato 🙂
Friday- Vegan Egg Roll In A Bowl from The Detoxinista (You can always add beef or pork if you are not vegan)
Saturday- Apricot Chicken with Veggies or side salad
Sunday- Kalua Pig from Nom Nom Paleo – I’ve made this before and it’s amazing! It can be eaten plain or wrapped in tortillas with taco toppings!
Monday- Quinoa Stuffed Peppers from The Detoxinista
School Lunches (Main Dish Only):
Friday- Tortillas with pizza sauce, nitrate free pepperonis and raw cheese (if tolerated) rolled up and cut into pinwheels.
Monday- Leftover Kalua Pig
Tuesday- Quesadillas with raw cheese or sandwiches with store-bought gluten free bread
Wednesday- Leftover strawberry salad
