This week I took Lance to see a nutritionist so I can find out for sure what foods he shouldn’t be eating and to have some guidance on healing his gut. While we don’t have the food allergy test back yet, she did tell me that she thinks he has an overgrowth of bad bacteria in his gut and not enough of the good bacteria. So she started him on some probiotics and told us that we are eating too much meat and not enough fiber! She said the 3 things that feed the bad bacteria in your gut are pasteurized dairy, meat products (especially beef), and sugar. We already eat dairy free and watch our refined sugar intake but we eat a lot of meat!
She actually suggested that we start following a whole foods plant based diet, which is very similar to vegan – whaat!?! However, she said that we don’t have to be perfect, just start leaning towards that diet and focus on eating plant based foods that nourish the gut and not feed the bad guys. While I don’t see us going vegan any time soon, I can see how we are probably eating too much meat, especially beef, and not getting enough fiber.
So I am going to try to cut back on the the amount of meat we eat, especially the beef. Instead of having meat for breakfast everyday we might start incorporating oatmeal and smoothies into the rotation, have more meat-less lunches, and I might even institute meat-less Mondays! We will see how it goes!!!!
She also told me she wants to get him tested for PANDAS (Pediatric Auto-Immune Neuropsychiatric Disorders Associated with Streptococcal Infections). It is basically when a virus causes an immune response and the child develops inflammation in the brain which causes OCD, anxiety, tic disorder, sensory problems and more – which Lance all has! When she was describing the symptoms for PANDAS I thought it sounded exactly like Lance so I’m excited to get him tested and treat any underlying infections if his test comes back positive.
Also, my kids went back to school today! While I’m sad that the summer break is over, it’s nice to be back on a schedule again. So as of this week, I will start including the kids lunches in my meal planning as well 🙂
Here’s is what I’m planning this week:
Thursday- Fettuccini Alfredo with Steamed Broccoli – this can easily be made vegan by leaving out the blackened chicken!
Saturday- We are eating at a friends house
Monday- Vegan Quinoa Burrito Bowls
Tuesday- Zucchini Noodles With Creamy Avocado Pesto topped with tomatoes
Sides and Extras:
Sunbutter with apples and celery
Easy Blender Vegan Waffles (make a double batch and freeze them for easy mornings)
Kids Lunches (Main Dish Only):
Friday- Mexicali Chopped Salad with Creamy Cilantro Lime Dressing – leave out corn and replace sour cream with coconut cream.
Wednesday- Sunbutter and Jelly Sandwiches with store bought gluten free bread
