Mint Chocolate Chip Milkshake {No Added Food Coloring}

You might be wondering how I got that beautiful green color without using food coloring. Well…. I used spinach!
When I told my sister-in-law that I put spinach in my milkshake she said, “Eww, that sounds gross!” But I promise you, you cannot taste the spinach at all!
Also, you don’t need any kind of special blender for this recipe. Any old thing will work and you will not have pieces of spinach in your milkshake!
It it so good! … that is if you like mint and chocolate, which I do!

Mint Chocolate Chip Milkshake {No Added Food Coloring}

Servings 2 Small Shakes


  • 1 Handful 1/4 - 1/2 C Baby Spinach, stems removed (baby spinach is more tender and easier to process)
  • 1/3 - 1/2 C SO Delicious Coconut Milk
  • 1 Pint SO Delicious Vanilla Bean Ice Cream**
  • 2 Tsp. Peppermint Extract
  • 1 Tbsp. Enjoy Life Dairy Free Chocolate Chips


  1. Place spinach and 1/3 C coconut milk into blender and blend until completely smooth. Scrape down bowl as necessary.
  2. Add ice cream and peppermint extract, blend til smooth. Add more milk as needed to help facilitate blending.
  3. Add the chocolate chips and blend a few seconds, leaving some small pieces of chocolate.

**You can use 1 pint of any dairy free vanilla ice cream… there are lots of great recipes out there!
