Weekly Meal Plan – Vacation Edition 2-8-2017

This week’s meal plan will be a little different because, as I’m sure you noticed from the title, we’re going on vacation!!! We are going snow-skiing with my parents and brother and his wife and are sharing a place with my parents and plan on doing most of the cooking in the room. I’m making 2 meals, mom’s making 2 meals, we will probably eat out at least once, then we will eat leftovers until we leave.

We have a truck so I have lots of room to pack anything my heart desires – well, mostly – and I plan on taking pretty much my whole kitchen! My husband is going to totally freak out when he sees how much I’m bringing! Since getting groceries in a small resort town is SO much more expensive than bargain shopping here at home (Hello Aldi’s!!), I’m buying everything we’ll need for the trip before we leave and packing a large ice chest.

We will be having Wednesday Wing Night tonight and tomorrow I will make the Cherry Chipotle Pork Chops from last week because I got sick and never made them – then we are off!

In the past, we have all taken turns with Lance at the Lodge while the rest of us ski or snowboard, but last year an employee told me that they have an instructor that specializes in children with autism. So this year I e-mailed them and they told me they did indeed have an instructor who was familiar with his disability and would happily give him private lessons. Lance says there is no way he is getting on skis and that he DOES NOT want to do it, but I think we are going to make him just to see if he likes it. Many times he says he absolutely WILL NOT do something but when we make him he turns out to like it. I’m not going to hold my breath this time though. Even though I really, really hope he will like it, I know it will be extra hard for him and there’s a good chance he won’t, but at least he will have tried… I will let you know how it went when we get back!

*Note- I will not be posting a meal plan next week since we will be gone.


While On Vacation I’m Making:

The Pioneer Woman’s Hamburger Soup

Pizza! I pre-mixed all the dry ingredients to make flatbread pizza. I will top it with raw cheese and nitrate-free pepperoni’s. I think the rest of the fam will make pita-bread pizzas or order in.

Mom’s Making:

Chimichangas – I pre-mixed all of the dry ingredients for Paleo Tortillas in a large baggie.

Needless to say, since I’m taking my entire kitchen I’m also taking my Vita-Mix blender and plan on making my Ultimate Green Breakfast Smoothie! I also ordered some Vanilla Bone Broth Protein Powder and am LOVING it!!! It will be great to take to the mountain and mix with a banana and non-dairy milk – both of which they sell at the lodge!

I pre-mixed all the dry ingredients for Coconut Flour Pancakes and Ranger Breakfast Cookies {Paleo & Nut Free}  to make at the room. For the cookies, I placed the shortening and add-in’s in small, separate baggies.

Trail Mix- I don’t use mixed nuts anymore since they contain peanuts so I just add whatever nuts and seeds I have in my fridge… sunflower kernels, pumpkin seeds, walnuts, almonds, and cashews are the usual mix. Great for travelling and on the mountain.

I also made a large salad to take, along with homemade balsamic vinaigrette.


When we get back:

Egg Roll In a Bowl – We have a late Doctor’s appt. Monday and this will be super fast and easy after I get home late!

One Pan Autumn Chicken Dinner – We don’t like brussel sprouts so I’m going to leave them out and add extra sweet potatoes.
