This week my meal plan is a little different than normal. First off, we are going on vacation next week!!! My hubby and I have been married for 15 years so we are going to San Francisco to celebrate and we couldn’t be more excited! Because of this though, I only have meals planned through Monday and there will be no meal plan next week, sorry!
Also, you might notice that most every day this week has a vegan option! The more research I do on meat products the harder I want to try to eat and feed my family more plant-based meals.
I’ve never been a big fan of eating vegan. First of all, I don’t know how to plan or cook a meal without meat, and second of all I thought it was too high carb with not enough protein and you wouldn’t feel full. However, I’ve been having some health problems and haven’t been feeling very well lately so I started doing a detox program (which happens to be vegan) up until we leave for vacation, and I can’t believe how much it has helped me! I feel better, I’ve lost weight, I’m clearer, my digestion is better, I feel full, and I’m getting plenty of protein – I can’t believe it!!!
I’ve been fighting it for several weeks now and haven’t thought that eating vegan was for us, but with all the research I’ve done, with Lance’s nutritionist telling us to eat more plant-based and less meat, and with me seeing good results first-hand, I’ve decided to quit fighting it! I’m going to try to change some of our habits and learn to cook more without meat. I will let you know how it goes 🙂
