Pepperoni Pizza Casserole {Keto, Paleo, Dairy Free, Gluten Free, Egg Free}

This keto pizza casserole is super easy to make and has all the great flavors of pizza but without the gluten, carbs, work of making a crust, and has lots of added veggies.

There’s just something about pizza that everybody loves. Every time I make this for my family, they go crazy. I’m thinking I might even double the recipe next time because we always seem to want more – and then we could have leftovers too 🙂

This keto pizza casserole is super easy to make and has all the great flavors of a pepperoni pizza but without the gluten, carbs, work of making a crust, and has lots of added veggies.  If you’re dairy free, I’ve made it with the Daiya Cutting Board Collection Cheese and it turned out amazing, my family couldn’t even tell the difference – but it does slightly up the carb content.

riced cauliflower:

If you haven’t heard of riced cauliflower, it’s exactly what it sounds like – cauliflower that has been shredded to look like rice. You can find pre-riced cauliflower at most stores now, I bought a bag at Target for this recipe. But if you can’t find riced cauliflower or want to do-it-yourself to save money, all you have to do is use a cheese grater to grate it by hand (this method results in the best riced cauliflower in my opinion) or you can place pieces of cauliflower in a food processor and process until it reaches the texture of rice.

Pizza Casserole {Keto, Paleo, Dairy Free, Gluten Free, Egg Free}

*If you don't have a cast-iron skillet, after step 5 transfer mixture to a 9x9 in glass baking dish, top with the cheese and pepperonis, then bake as directed.

Ingredients

  • 2 Tbsp. Avocado or Coconut Oil
  • 1 Onion chopped
  • 1 Bell Pepper any color , chopped
  • 2 Cloves Garlic minced
  • 1 Medium Zucchini chopped into small pieces
  • 1 Cup Allergy Friendly Low Sugar Pizza Sauce
  • 2 Cups Riced Cauliflower about 1/2 head of cauliflower, see notes above
  • 1 1/2 Cup Mozzarella Cheese use Daiya if dairy free
  • 5 oz Uncured Pepperonis cut into fourths
  • Fresh Basil for garnish (optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. Add the oil to a 9 inch cast-iron skillet and heat over medium heat.
  3. When oil begins to shimmer, add the onions and peppers. Saute around 5 minutes or until onions start to soften.
  4. Add the zucchini and garlic, continuing to cook an additional 5 -7 minutes. Then, add the riced cauliflower and cook for about a minute.
  5. Add the pizza sauce, 1 cup of the cheese, and the pepperonis to the skillet, reserving a few pepperoni slices for the top.
  6. Top with the remaining cheese and pepperoni's.
  7. Bake for 15 minutes or until hot and bubbly.
  8. Garnish with fresh basil.
