Add some cream of tartar to the egg whites. The cream of tartar will stabilize the egg whites and prevent the cake from falling. Then, with an electric mixer, beat on medium-low until foamy - about 1 minute.
For the sweetener, powdered swerve or powdered lakanto will work, but I recommend using a powdered monk fruit/allulose blend.
Pour the dry ingredients into a sifter. Sift the dry ingredients into the egg whites in several additions, gently folding after each addition using a rubber spatula.
