Keto Cashew Chicken
Add coconut aminos or soy sauce, sesame oil, and rice vinegar to a bowl.
Whisk in keto sweetener and fish sauce. Set aside. Chop chicken thighs into bite-sized pieces.
Sprinkle with sea salt and cook until nicely browned.
Add minced garlic, ground ginger, and a green bell pepper.
De-glaze the pan with sherry cooking wine or chicken broth and add the sauce.
Lightly sprinkle in xanthan gum to thicken the sauce and stir in some unsalted cashews.
Serve over cauliflower rice and garnish with green onion and sesame seeds.
