Keto Chicken Pot Pie Soup
“This is so delicious it tastes like it should be bad for you. But it’s also HEALTHY! New favorite soup!
Chop 1 or 2 carrots, celery, and an onion.
Add butter (can use non-dairy butter) & chopped veggies to a pot. Simmer until tender, then add garlic.
Add chicken broth, bay leaves, and chicken. Cook on the stove or in an Instant Pot.
Blend together coconut cream (or heavy cream) and steamed cauliflower.
Pour cream mixture into soup.
Remove the chicken, shred, and return to the pot. Then add salt, pepper, and ground thyme.
Serve & enjoy!
