*After a week off, I am back with my weekly meal plan!
I spend a lot of time each week planning our meals, so I decided to go ahead and publish my weekly meal plans for those of you who are interested. While we do not eat Grain Free 100% of the time, when I plan and prepare meals I prefer them to be Grain Free & Mostly Paleo (gluten, grain, dairy, soy, legumes, and refined sugar free) because I believe it’s the best way to heal leaky gut, which my son and I both have.
I know that changing over to a Paleo lifestyle can be difficult, but to reduce the amount of time you have to spend in the kitchen, here are a few helpful tips:
1) When you get the cutting board out and are cutting up veggies for dinner, go ahead and cut up all of your veggies for the entire week and keep them in the fridge until you are ready to use them. This will make dinners the rest of week a bit easier.
2) I like to boil bone-in chicken once a week and then make homemade chicken stock with the carcass. That way I have homemade chicken stock (which is SO much healthier than the store-bought stuff) to use in recipes and shredded chicken all week long in my fridge for salads, which we eat a lot of for lunch. HERE is my recipe 🙂
Hot Wing Wings. I make these every week after getting groceries. They are super easy to make and yummy after being gone all day. I serve them with Ranch dip and veggies. Then, I send the leftover veggies and dip in my kids lunchboxes the next day 🙂
Chicken Tenders. The last time I made my baked chicken tenders, they didn’t turn out the way they have in the past, so I’m going to tweak the recipe to ensure a crispy coating every time. But my fried chicken tenders are always perfect! I’m going to serve my chicken tenders with Glazed Carrots
Snacks & Desserts
*To save money, I go to Sprouts on Double Ad Wednesdays, I use the Target Red Card which saves me 5%, and I use the Target Cartwheel app for coupons. All of this saves me from 20 to 30 dollars a week!!!
