I am absolutely obsessed with this mojito smoothie! It has all the classic flavors of a mojito - mint, lime, and sugar - but healthy, filling, & alcohol-free!

Baby Spinach
loosely packed, stems removed

Fresh Mint Leaves
or to taste

Fresh Pineapple Chunks or 1 Medium-Sized Organic Apple
the apple is a bit sweeter

Ripe Avocado
peeled and pitted
Juice of 1 Lime
or to taste (about 1 Tbsp.)

Instructions
Place all ingredients in a high powered blender and blend until smooth. Taste and adjust the ingredients as needed.
Notes
For lower-carb
, feel free to omit the fruit and add liquid vanilla stevia to taste.
Please don't use reconstituted lime juice
- it just isn't the same! Fresh tastes much, much better!
If you're worried about adding avocado to a smoothie - don't be!
You can't taste the avocado, but it makes it thick and creamy.
Be sure you're avocado isn't overly ripe!
If it is, it will lend a bad aftertaste.
