1CVegenaiseSoy Free (mayo) ... OR ... ½ C Vegenaise and ½ C So Delicious Greek Yogurt, plain mixed with ½ Tsp. Lemon Juice (I prefer the ½ and ½ version)
PinchOnion Powder
1Tbsp.Honey or Sugar
2Cans Artichoke Heartsdrained
Pinchor 2 of Cayenne Pepperor to taste
¼Tsp.Lemon Juice
¼Tsp.Garlic Powder
1CAlmond Flouryou can grind your own in a high powered blender or in batches using a coffee grinder
1 ¼Tsp.Sea Salt
2Tbsp.Nutritional Yeastgives it a cheesy taste, found on spice aisle of your local health food store
Black Pepperto taste
9OzFrozenChopped Spinach, thawed
Instructions
Preheat oven to 375 degrees and thaw spinach.
Combine all ingredients except spinach and 1 can of the artichoke hearts in the bowl of a food processor.
Process until well combined but not liquefied. Taste and adjust ingredients as needed.
Chop up the remaining artichoke hearts into bite-sized pieces to give your dip texture. But don't make them too big... you don't want anyone to choke!
In a medium-sized baking dish, combine the spinach, artichoke hearts and contents from food processor.
Bake 20 - 30 minutes or until bubbly and hot. Serve immediately. Store in sealed container in fridge.
