- Butter - Onion - Celery - Carrot - Garlic - Bay Leaves - Chicken Broth - Frozen Peas - Chicken Breasts
Chop the onion, celery, and carrots. Set aside. Lightly season the chicken breasts with salt and pepper. Set aside.
Melt butter in the pot of an Instant Pot or in a large pot or Dutch oven and sauté the veggies until tender.
Add garlic, chicken broth, bay leaves, frozen peas (if using), and boneless skinless chicken breasts. Cook until the chicken is cooked through.
After chicken breasts have cooked through, remove them with a slotted spoon and place them in a large, shallow bowl or a cutting board, and shred them with 2 forks.
