Quick and Easy Keto Condensed Cream Of Mushroom Soup

This keto mushroom soup is easy to make and gluten-free—perfect for recipes that call for canned cream of mushroom soup. With simple swaps, it can also be Whole30, vegan, and paleo-friendly!

Ingredients

- Butter - Onion - Mushrooms - Garlic - Chicken Broth - Heavy Cream

Step 1

Heat the butter or oil in a medium-sized saucepan over medium heat.

Step 2

Once hot, add the onion, garlic, and mushrooms. Sautee until the mushrooms are soft and the onion is translucent, around 3 to 5 minutes. 

Step 3

Slowly add in the chicken broth and heavy cream. Then stir in the thyme, salt, and pepper. Taste and adjust seasonings as needed.

Step 4

Transfer to a blender and blend until smooth (or use an immersion blender). Be very careful because the soup is hot!
