Mix together all of the ingredients except the chocolate chips in a large bowl. The batter should be fairly thick. Add more coconut flour, one Tablespoon at a time, if the batter needs to be thicker.
Roll the batter into 18 Tablespoon-sized balls and place them on a lined baking sheet.
If needed, transfer to the fridge for 10 minutes or the refrigerator for about 20 minutes to firm up.
