Lemon Poppyseed Keto Fat Bombs {Paleo, Gluten Free, Vegan}

These lemon poppyseed energy bites taste like a dense, rich, lemon poppyseed muffin - but way healthier and are low carb.

Ingredients

Filling:

  • 1 Cup Almond or Cashew Butter
  • 2 Tbsp. Fresh Lemon Juice more to taste
  • Zest from 1 Lemon
  • 1 tsp. Pure Vanilla
  • 1 C Shredded, Unsweetened Coconut
  • 2 Tbsp. Vanilla Protein Powder or Collagen
  • 1/3 C Erithritol or Swerve
  • 2 Tbsp. Ground Chia Seeds
  • 1 1/2 Tbsp. Poppyseeds

Topping:

  • 1 Tbsp. Erithritol or Swerve
  • 1 Tbsp. Coconut Flour
  • 1 tsp. Lemon Zest

Instructions

  • Line a large baking sheet with parchment paper.
  • Place all of the filling ingredients into the bowl of a food processor except the the poppyseeds. Pulse until completely combined.
  • Then pulse in the poppyseeds until combined.
  • Form mixture into small balls with your hands and place on the cookie sheet.
  • In a small bowl, combine the topping ingredients.
  • Roll each ball in the topping mixture to very lightly coat.
  • Place back on the baking sheet and place in the fridge or freezer until set.
  • Store in a sealed container in the refrigerator.

Notes

Nutritional Information uses Almond Butter.
If you are strict Keto these may not be right for you because they have approximately 4 net carbs per bite. We are new to keto and when I was coming up with the recipe I didn't realize how many carbs nut butter has! The bites are really big though, so you could easily half them and they they would only have 2 net carbs.
