Almond Flour Zucchini Muffins

These almond flour zucchini muffins or bread are a family-favorite! They're lightly sweetened with the cozy taste of cinnamon and nutmeg and are soft and bread-like from the moisture of the zucchini.


- Grated Zucchini - Blanched Almond Flour - Ground Flaxseed - Baking Soda - Baking Powder* - Sea Salt - Ground Cinnamon - Erythritol-Based Granulated Sweetener

Step 1

Start by grating a cup of zucchini. One cup is roughly one medium zucchini. Then, take a paper towel and blot off the excess moisture. Set aside.

Step 2

In a large bowl, whisk together some almond flour, ground flaxseed, baking soda, baking powder, sea salt, cinnamon, nutmeg, and sweetener.

Step 3

In a separate bowl, whisk together some eggs, avocado oil, and pure vanilla.

Step 4

Stir the wet ingredients into the dry. Then, stir in the grated zucchini and chocolate chips. Pour the batter into a parchment-lined and greased muffin tin.
