Creamy Pesto Pasta

Now that it’s summer, here’s an easy pasta idea to use up all that yummy, delicious basil that’s growing like crazy this time of year. Enjoy!

Creamy Pesto Pasta
 
Ingredients
  • gluten and dairy free cooking spray
  • 2 large boneless, skinless chicken breasts
  • salt and pepper
  • ¼ C Italian dressing or vinaigrette (dairy free)
  • 1 lb. Tinkyada pasta
  • 2 C fresh basil
  • 3 T pine nuts
  • ¼ - ½ C Parmesan cheese (dairy free)
  • up to ⅓ C olive oil
  • splash of lemon juice, optional
  • 3 cloves garlic
  • ½ C SO delicious coconut creamer, original or non-dairy milk
  • 2 T Earth Balance butter (vegan butter)
  • 2 large tomatoes
Instructions
  1. Defrost (if necessary) and cut chicken into bite-sized pieces.
  2. Place chicken, Italian dressing, salt, and pepper in large dish or baggie. Marinate for up to 2 hours in refrigerator or as time permits. (I don't always marinate mine)
  3. Heat oil in large skillet over medium heat. Add the chicken and saute until cooked through, stirring occasionally. Set aside.
  4. Lets make the pesto: *Note- All of these ingredients are to taste. Adjust as needed.
  5. Throw the basil, pine nuts, garlic, and parmesan cheese into your food processor.
  6. Throw on lid and start processing. Drizzle in the olive oil 1 Tbsp. at a time until it reaches a good consistency. Add salt and pepper then taste and adjust ingredients. Add a splash of lemon juice if desired. (If you don't want to make the parmesan cheese, try adding nutritional yeast to taste)
  7. In a medium skillet, throw in the butter and creamer. Heat until butter is melted over medium heat.
  8. Add the pesto to the cream mixture and heat through.
  9. Pour the creamy pesto sauce over the pasta.
  10. Chop up some tomatoes and throw them in as well. Voiala! Perfect summer pasta!
