Ingredients
Here are the simple low-carb brownie bite ingredients:
- Whole Pecans - If you prefer, you can substitute walnuts. However, walnuts will add one net carb per brownie bite.
- Sea Salt - Enhances flavor.
- Cocoa Powder - Chocolatey taste.
- Almond or Peanut Butter - Adds texture, thickness, and flavor.
- Keto Granulated Sweetener - I prefer to use pure allulose or a monk fruit/allulose blend because sometimes erythritol-based sweeteners can leave a slight aftertaste. However, any granulated keto sweetener will work! If you use anything other than pure allulose, reduce the sweetener to ¼ cup, as other sweeteners are stronger than allulose.
- Coconut Flour - For thickness, as needed
- Filtered Water - To thin out the batter as needed.
- Keto Chocolate Chips - My favorite sugar-free chocolate chips are Lily's and ChocZero!
- Pure Vanilla - If possible, use pure vanilla, not the imitation variety.
🔪 Easy instructions
Step #1: Add the pecans or walnuts and sea salt to the bowl of a food processor. While I prefer the taste of walnuts, pecans have fewer carbs, and either one will work!
Process until the nuts are broken up into small pieces.
Step #2: Add cocoa powder, allulose, and almond or peanut butter and process until combined.
💭Top Tip: Depending on the thickness of your nut butter, you may need to add either coconut flour or water to achieve the right consistency. You want the batter to hold together and roll into a ball easily.
For really thin nut butter, you may need to add coconut flour, 1 Tablespoon at a time, until the bites hold together.
If your nut butter is fairly thick, your batter may be crumbly. If this happens, add water, 1 Tablespoon at a time, until it comes together.
Step #3: Briefly pulse in some low-carb chocolate chips. Then, roll them into 18 bite-sized balls and place them on a parchment-lined baking sheet.
Step #4: Place in the freezer for 15 minutes to set up and enjoy!
Storage
- Store: Leftover keto brownie bites can be stored in a resealable baggie or sealed container in the fridge for up to a week
- Freeze: Keep them frozen in a freezer-safe container for up to 3 months.
Substitutions
This recipe is naturally gluten-free, grain-free, low-carb, and keto. However, here are some substitutions to fit more diets:
- For Paleo, replace the allulose with ¼ cup coconut palm sugar and use paleo-compliant chocolate chips.
- For Dairy-Free and Vegan, use dairy-free chocolate chips.

Keto No-Bake Brownie Bites
Ingredients
- 1 Cup Whole Pecans - or walnuts
- ⅛ tsp. Sea Salt
- ¼ Cup Cocoa Powder
- ½ Cup Almond or Peanut Butter
- ⅓ Cup Allulose - see notes below for substitutions
- Coconut Flour - as needed
- Filtered Water - as needed
- ¼ Cup Keto Chocolate Chips - or chocolate chips of choice
- ½ tsp. Pure Vanilla
Instructions
- In the bowl of a food processor add the walnuts and sea salt. Process on high for 5 to 10 seconds, or until the nuts are broken up into small pieces.
- Add the cocoa powder, nut butter, vanilla, and allulose. Process until well combined and the batter starts coming together. Add coconut flour to thicken or water to thin if it's crumbly, one tablespoon at a time, as needed to achieve the right consistency (see notes below).
- Pulse in the chocolate chips. Taste and add more allulose if needed.
- Line a baking sheet with parchment paper.
- Roll the dough between the palms of your hand to form in 18 bite-sized balls and place them on the parchment paper.
- Place the baking sheet in the freezer for 10-15 minutes or until firm and enjoy!
- Store leftover keto brownie bites in a resealable baggie in the fridge for up to a week or freeze for up to 3 months.

I've made these with both walnuts and pecans, and they're equally great. I use Trader Joe's creamy almond butter, and in addition to the cocoa, 1 heaping tsp of espresso powder and a 1/2 tsp of cinnamon. Heavenly!
To make dough management easier, I dump the mixture into a sheet of waxed paper, then roll that into a log--makes it really easy to get consistent portions. Finally, instead of putting the chocolate chips in the mix, I press them into the tops of the choco-balls for a festive look. I've served these to guests and they don't realize they're keto-friendly.
BTW, if you have a Kroger store near you, get the sugar-free Kroger chocolate chips - better and a third the price of the 'keto' ones--and mix nicely with peanuts for another keto-friendly snack!

I haven't tried it so I can't say for sure, but I think it would probably work! The only thing I might worry about is having little pieces of skin from the almonds in the bites, but I really can't say for sure without trying it. If you give it a shot please let me know how it turns out!

I made these minus the nuts because I didn't have any but your recipe says it makes 18 but I only came up with 16. I wonder if that had anything to do with me nibbling before rolling? ? You need to make sure to put that in the recipe also. Lol. I just couldn't resist. I did add a little MCT oil and a tad of Almond milk when it got a little thick. I sure wish I had some nuts. They would have been perfect.

Loved this super quick and reasonably cheap recipe. Definitely a keeper! I made 1.5 times the amount and varied it with 3 teaspoons sugar, not sweetener, rolled in sesame seeds rather than add coconut flour and put them in the fridge for 20-30 mins not the freezer. They were chocolatey with a hint of sweetness and looked good. These are my new must take party food! I'd suggest also rolling in coconut, black sesame seeds, chocolate sprinkles or 100s and 1000s for the kids. Enjoy!

I made these tonight and they turned out great. I put a half scoop of collagen in. I can see lots of possibilities to make these healthier. Next time I'll add some flax seed or hemp seed. I will definitely try the pecans next time!! BUT I HAVE A QUESTION...HOW MANY SHOULD IT MAKE? I THINK SOME OF MINE ARE TOO BIG AND THEREFORE THE CARB COUNT WILL BE OFF. I HAVE 27.
