While I love making sandwiches (or these hawaiian roll sliders from This Vivacious Life) with keto sandwich bread, 90-second bread, or with store-bought Carbonaut bread, I don't always have bread on hand and there's just something so fun about these keto roll-ups!
These have become my new go-to easy lunch and I'm sure they will quickly become your new go-to keto lunch tool!

Ingredients
Here are the easy ingredients to make keto pinwheels:
- Deli Meat: Choose large, thick-cut deli meat that doesn't fall apart easily. While roast beef can be used, it tends to fall apart. I prefer ham or turkey.
- Cream Cheese: Be sure to soften it so it spreads easily. You can set it on the counter or place it in the microwave for 5 to 10 seconds to soften.
- Ranch Seasonings: A simple combination of garlic powder, onion powder, sea salt, and dill.
- Shredded Cheddar Cheese: Cheddar cheese pairs perfectly with the bacon ranch flavor. However, feel free to use any kind you prefer. Also, feel free to use thinly sliced block cheese or sliced cheese.
- Bacon: Because everything is better with bacon!
- Dill Pickles: Whole pickles that have been quartered or thinly sliced lengthwise. I like to buy some with a little bit of spice!
Easy instructions
Here are the easy instructions to make keto roll-ups:
Step #1: Stir the ranch seasonings into the softened cream cheese. Spread onto a slice of deli meat.
Step #2: Sprinkle on some shredded cheddar cheese.
Step #3: Add bacon.
Step #4: Add one or two sliced pickle spears.
Step #5: Roll up tightly.
Step #6: If you plan on slicing them, place them in the fridge for 30 minutes to an hour to set up. Then, slice and serve!
