I LOVE no-bake poppable treats like these keto lemon poppy seed balls and my no-bake keto brownie bites!
They're easy to make, filling, portable, and perfect for snacks in-between meals or for small desserts.
They're lemony with the crunch of poppy seeds and super addictive and delicious. But be warned - they're not light and fluffy!
Rather, they are nut butter-based which makes them thick, dense, and super filling.
Plus, they're paleo, gluten-free, and vegan - YAY!

The sweetener
For the sweetener, any keto granulated sweetener will work.
I prefer to use Monk Fruit or Allulose (or a blend of the two) because they have zero aftertastes.
But erythritol-based sweeteners (such as Swerve and Lakanto) will work too!

Ingredients
Here are the easy ingredients to make the keto energy bites:
- Almond or Cashew Butter - The base of the recipe, use the creamy variety with no added sugar.
- Fresh Lemon Juice & Zest - Be sure to use fresh, the reconstituted stuff just isn't the same!
- Pure Vanilla - If possible, use pure vanilla and not the imitation variety.
- Shredded, Unsweetened Coconut - Adds flavor and texture.
- Vanilla Keto Protein Powder or Collagen - Adds texture, sweetness, and flavor.
- Keto Sweetener - I recommend allulose or a monk fruit/allulose blend because they have NO aftertastes and aren't gritty.
- Ground Chia Seeds - Adds texture.
- Poppy Seeds - Light crunch and flavor.
- Coconut Flour - Added as needed to thicken.
🔪 Easy instructions
Step #1: In the bowl of a food processor, add all of the ingredients except the poppy seeds and coconut flour.
Step #2: Process until well combined. Then, pulse in the poppy seeds.
Step #3: Add coconut flour, one tablespoon at a time, if the mixture is not thick enough to stick together. Or add water, one tablespoon at a time, if the mixture is too crumbly.
Step #4:Taste and add more lemon juice and/or sweetener as desired.
Step #5: Roll the batter into 24 small bites and place them on a parchment-lined baking sheet.
Step #6: Roll each keto energy bite in a sweetener/coconut flour mixture and place them back on the baking sheet.
Step #7: Place in the fridge for 15 to 20 minutes or freezer for 5 to 10 minutes, or until set.
Storage
Store leftover bites in a resealable baggie in the fridge for up to a week or in the freezer for up to 3 months.
💭 Top tips
- I used almond butter, but any mild nut butter will work.
- Just so you're prepared, these aren't light and fluffy! But rather they are nut butter-based making them thick, dense, and filling. One or two should definitely be enough to get you through 'til your next meal.
- Feel free to taste and adjust the lemon juice and sweetener to your personal preferences.
- I love to add vanilla protein powder or collagen for an added health boost but feel free to omit it! If you omit it, however, you may need to add additional coconut flakes or maybe even some almond flour so the bites aren't too wet and hold together. Be sure to taste the bites and add additional sweetener as needed if you leave out the protein powder.

Keto Lemon Poppy Seed Balls
Ingredients
Filling:
- 1 cup Almond or Cashew Butter
- 2 Tbsp. Fresh Lemon Juice - more to taste
- Zest from 1 Lemon
- 1 tsp. Pure Vanilla
- 1 cup Shredded, Unsweetened Coconut
- 2 Tbsp. Vanilla Protein Powder or Collagen - optional
- ⅓ cup Keto Sweetener - see notes below
- 2 Tbsp. Ground Chia Seeds
- 1 ½ Tbsp. Poppy Seeds
Topping:
- 1 Tbsp. Keto Sweetener - see notes below
- 1 Tbsp. Coconut Flour
- 1 tsp. Lemon Zest
Instructions
- Line a large baking sheet with parchment paper.
- Place all of the filling ingredients into the bowl of a food processor except the poppy seeds. Pulse until completely combined. If the mixture is not thick enough to hold together, add coconut flour, one tablespoon at a time, as needed. If the mixture is too crumbly, add water, one tablespoon at a time, until mixture comes together.
- Taste and add more lemon juice and/or sweetener as needed. Then, pulse in the poppy seeds until combined.
- Form mixture into 24 small balls with your hands and place on the lined baking sheet.
- In a small bowl, combine the topping ingredients.
- Roll each ball in the topping mixture to very lightly coat.
- Place back on the baking sheet and place in the fridge for 15 to 20 minutes, or the freezer for 5 to 10 minutes, or until set.
- Store in a sealed container in the refrigerator for up to a week or in the freezer for up to 3 months.
