Ingredients
Here are the simple low-carb brownie bite ingredients:
- Whole Pecans - If you prefer, you can substitute walnuts. However, walnuts will add one net carb per brownie bite.
- Sea Salt - Enhances flavor.
- Cocoa Powder - Chocolatey taste.
- Almond or Peanut Butter - Adds texture, thickness, and flavor.
- Keto Granulated Sweetener - I prefer to use pure allulose or a monk fruit/allulose blend because sometimes erythritol-based sweeteners can leave a slight aftertaste. However, any granulated keto sweetener will work! If you use anything other than pure allulose, reduce the sweetener to ยผ cup, as other sweeteners are stronger than allulose.
- Coconut Flour - For thickness, as needed
- Filtered Water - To thin out the batter as needed.
- Keto Chocolate Chips - My favorite sugar-free chocolate chips are Lily's and ChocZero!
- Pure Vanilla - If possible, use pure vanilla, not the imitation variety.
🔪 Easy instructions
Step #1: Add the pecans or walnuts and sea salt to the bowl of a food processor. While I prefer the taste of walnuts, pecans have fewer carbs, and either one will work!
Process until the nuts are broken up into small pieces.
Step #2: Add cocoa powder, allulose, and almond or peanut butter and process until combined.
💭Top Tip: Depending on the thickness of your nut butter, you may need to add either coconut flour or water to achieve the right consistency. You want the batter to hold together and roll into a ball easily.
For really thin nut butter, you may need to add coconut flour, 1 Tablespoon at a time, until the bites hold together.
If your nut butter is fairly thick, your batter may be crumbly. If this happens, add water, 1 Tablespoon at a time, until it comes together.
Step #3: Briefly pulse in some low-carb chocolate chips. Then, roll them into 18 bite-sized balls and place them on a parchment-lined baking sheet.
Step #4: Place in the freezer for 15 minutes to set up and enjoy!
Storage
- Store: Leftover keto brownie bites can be stored in a resealable baggie or sealed container in the fridge for up to a week
- Freeze: Keep them frozen in a freezer-safe container for up to 3 months.
Substitutions
This recipe is naturally gluten-free, grain-free, low-carb, and keto. However, here are some substitutions to fit more diets:
- For Paleo, replace the allulose with ยผ cup coconut palm sugar and use paleo-compliant chocolate chips.
- For Dairy-Free and Vegan, use dairy-free chocolate chips.
💭 Top tips
- Walnuts and pecans both work in this recipe. However, the pecan version has fewer carbs, with 1.68 net carbs per bite, while the walnut version has three net carbs per bite.
- Depending on the thickness of your nut butter, you may need to add either coconut flour or water to achieve the right consistency. You want the batter to hold together and roll into a ball easily.
- For the sweetener, I prefer to use pure allulose or a monk fruit/allulose blend because sometimes erythritol-based sweeteners can leave a slight aftertaste. However, any granulated keto sweetener will work! If you use anything other than pure allulose, reduce the sweetener to ยผ cup, as other sweeteners are stronger than allulose.

It doesn't say how many brownies you cut it into!

You roll the batter into 18 bite-sized balls ๐

I've made these with both walnuts and pecans, and they're equally great. I use Trader Joe's creamy almond butter, and in addition to the cocoa, 1 heaping tsp of espresso powder and a 1/2 tsp of cinnamon. Heavenly!
To make dough management easier, I dump the mixture into a sheet of waxed paper, then roll that into a log--makes it really easy to get consistent portions. Finally, instead of putting the chocolate chips in the mix, I press them into the tops of the choco-balls for a festive look. I've served these to guests and they don't realize they're keto-friendly.
BTW, if you have a Kroger store near you, get the sugar-free Kroger chocolate chips - better and a third the price of the 'keto' ones--and mix nicely with peanuts for another keto-friendly snack!
Cassidy Stauffer says
YAY I'm so happy you like them!!! And thank you for the tips, I will definitely try them! Sadly, we don't have a Kroger near us, but hopefully we'll get one soon!!

Cassidy

THESE ARE INCREDIBLE.
I have tried so many 5-star recipes only to find out most are 3-stars at best. My junk-food loving side of the family loves them & thatโs when I knew these would become a weekly staple.

Oh my goodness, thank you so much Paige!!!! I'm so excited you liked them!!! These are a staple at our house too ๐

maya says
can i use almonds instead of walnuts ?
Cassidy Stauffer says
Hi Maya!
I haven't tried it so I can't say for sure, but I think it would probably work! The only thing I might worry about is having little pieces of skin from the almonds in the bites, but I really can't say for sure without trying it. If you give it a shot please let me know how it turns out!

What flour alternative could be used instead of coconut flour?

Cassidy Stauffer says
Hi Tiffany! You can really use any flour you want! It's only added to thicken up the brownie bites if needed ๐ Depending on the almond butter I'm using, sometimes I don't even need to add any! I hope this helps - let me know what you think!
-Cassidy
Tiffany says
I will try to use almond flour and see if that works! Thank you Cassidy. By any chance you're interested in doing collabs, you can check out the offers in our Collaboration section at Phlanx! https://phlanx.com/collaborations You can also check us out at Instagram @phlanxglobal

Wow, wow, wow!! I was not expecting what I got. Followed the recipe exactly with pecans and no coconut flour or water/ milk added. When it was done, it tasted like my mom's no bake cookies I always loved as a kid... AMAZING!
Cassidy Stauffer says
Thank you so much Sami!!! I agree they do taste a bit like no-bake cookies - I'm so happy you liked them ๐

I made these minus the nuts because I didn't have any but your recipe says it makes 18 but I only came up with 16. I wonder if that had anything to do with me nibbling before rolling? ? You need to make sure to put that in the recipe also. Lol. I just couldn't resist. I did add a little MCT oil and a tad of Almond milk when it got a little thick. I sure wish I had some nuts. They would have been perfect.

Made these today and they were PERFECT! Did not need the coconut flour. I used 1/2 almond butter and 1/2 peanut butter. Just the right-size โsweetโ treat for after dinner. Thank you for the recipe!
Lou says
Could you make these with Almonds instead of walnuts/pecans? I'm planning on using ground almonds instead
Cassidy Stauffer says
Hi Lou! Yes, you can make them with almonds, it will just very slightly change the taste ๐ I hope you enjoy them!

How many does this recipe make? And how many is considered a serving?

Hi Mary! This recipe makes 18 brownie bites about the size of a ping-pong and one brownie bite is considered a serving. I hope this helps! Enjoy ๐

Tessa Simpson says
Yummy! I used toasted pecans, some collagen, and used a combo of sunflower seed butter and mixed nut butter. Delish...no chocolate chips needed!
Cassidy Stauffer says
YAY Tessa, I'm so excited you liked them!!! I'll have to try them with your variations ?
Juanita says
I love these. I don't use walnuts because I'm allergic. I substitute 1/4 peanuts. Not sure what the Carb Count is because I have a hard time with measurements, but i know it's not that much. I just shared this recipe with a co-worker too. Definately my Go-To for Keto
Stacy says
I used pecans to replace the walnuts and loved them!
Sally Chapman says
Loved this super quick and reasonably cheap recipe. Definitely a keeper! I made 1.5 times the amount and varied it with 3 teaspoons sugar, not sweetener, rolled in sesame seeds rather than add coconut flour and put them in the fridge for 20-30 mins not the freezer. They were chocolatey with a hint of sweetness and looked good. These are my new must take party food! I'd suggest also rolling in coconut, black sesame seeds, chocolate sprinkles or 100s and 1000s for the kids. Enjoy!
Jan says
I made these tonight and they turned out great. I put a half scoop of collagen in. I can see lots of possibilities to make these healthier. Next time I'll add some flax seed or hemp seed. I will definitely try the pecans next time!! BUT I HAVE A QUESTION...HOW MANY SHOULD IT MAKE? I THINK SOME OF MINE ARE TOO BIG AND THEREFORE THE CARB COUNT WILL BE OFF. I HAVE 27.
Cassidy Stauffer says
Hi Jan, I have the recipe making 18 and the nutrition info is per bite - so your nutrition info would actually be less!!! We are pretty big eaters at my house and I hate when serving sizes or super small so all of my recipes have good sized servings ๐ I love that you added collagen, I'll have to try that! This is a good recipe to add all kinds of healthy stuff to!

Cory says
Does it matter what kind of cocoa is used? Regular or Dutch processed?
Cassidy Stauffer says
Hi Cory! Since they aren't baked it doesn't matter - whichever you prefer is fine ๐

marcia stuhlsatz says
I don't have the sugar free chocolate chips. Can I leave them out or substitute something else?
Cassidy Stauffer says
Hi Marcia! You can leave them out, but they won't be as sweet or chocolate-y. You could maybe use cocoa nibs, but they definitely won't be as sweet. Let me know what you try and how they turn out!!!
