I tried cooking bacon in the oven three ways - on a broiler pan, a cooling rack, and directly on a parchment-lined baking sheet. I also tried cooking it in different quantities, here are my results:
Quantity
Initially, I tested cooking the bacon in small batches and decided that I liked the parchment paper method better.
However, when I tested it with an entire package, it was soft and soggy.
Ultimately, I retested each method using an entire package (12 oz.) and got 3 TOTALLY different results as opposed to when I cooked just a few slices. I found that the more you cook, the more airflow you need to get them crispy and they need to cook longer!
Long story short, I don't recommend using a different quantity of bacon. However, if you cook less, you will need to reduce the cooking time and keep a close eye on them so they don't burn.
Parchment paper method
I found that, when cooked on parchment paper, I just couldn't get the bacon crispy. I was cooking it for more than 30 minutes at 400 degrees and it still seemed soggy 😔
And even though I liked the parchment paper method with only a few slices, it did not work well with an entire package. And who wants to only cook a few slices at a time?? Not me! I want ALL THE BACON 🤣
Broiler pan/cooling rack method
Initially, I only tested this recipe on a broiler pan, thinking it would have the same results as a cooling rack. I was wrong!
For this particular recipe, the broiler pan just doesn't allow enough airflow to get the bacon crispy.
So, even though they are usually used interchangeably, I only recommend using a cooling rack, not a broiler pan.
A cooling rack was definitely the best! It was the only method that resulted in super beautiful, crispy bacon and is my recommended cooking method.

Picking out bacon

Uncured simply means that it doesn't contain added nitrates or nitrites (in some studies these have been linked to cancer), but instead, relies on natural ingredients, such as celery salt, for curing.

I tested this recipe with Uncured Hormel Bacon, which is regular-cut. If you use a thinner-cut or a thick-cut variety, you will need to adjust the cooking time accordingly.
Easy instructions
Here is the super simple way to make the best keto bacon in the oven:
Step #1: Line a large baking sheet with aluminum foil (for easy cleanup) and place a folded oven-safe cooling rack (or cookie rack) inside the baking sheet. Arrange the bacon in a single layer on top of the rack.
Step #2: Bake at 400 degrees for 23 to 28 minutes (check after 18 minutes for thin bacon or cook longer for thick-cut bacon), or until desired crispiness. Pat the tops with paper towels to remove excess oil to help them get crispy. Then, allow to set for a few minutes to firm up before serving.
Storage and reheating
- Store: Store covered in the fridge for 3 to 5 days.
- Reheat: Reheat in the microwave, oven, or air fryer. For the over or air-fryer, reheat at 400 degrees until they're hot and sizzling, around 5 to 8 minutes.

Clean-up
Unlike cooking on the stove top, cleanup is a cinch!
After everything has cooled, throw away the aluminum foil, rinse out the baking sheet, and place the wire rack in a sink full of water to soak.
After it has soaked awhile, simply wipe it down with some soap and rinse it off or put it in the dishwasher - easy peasy 😀

- The bacon will shrink as it cooks, so the pieces can touch and be close together, but do not overlap so they get nice and crispy.
- Bacon can go from not-quite-done to burned very quickly. When it is close to being done, so be sure to check on it every few minutes.
