Bread. It's one of the hardest things to give up when going gluten-free and low-carb.
The smell, the taste, the texture. It's a favorite and a staple for many people. However, I'm here to tell you that you no longer have to give up bread!
These are by far the best almond flour dinner rolls I've ever tried, and I'm super excited to share them with you today!
They have that classic bread smell, taste, and texture you've missed! Plus, they're super easy to make.

Ingredients
Here are the easy ingredients that most keto pantries already have on hand:
- Blanched Almond Flour - Keto, low-carb flour.
- Flaxseed - Low-carb flour that adds stretch and texture. Use the golden variety for a lighter-colored keto roll.
- Psyllium Husk Powder OR Xanthan Gum - Binder, keeps the low-carb rolls from being crumbly.
- Sea Salt - Enhances flavor.
- Baking Powder - Adds rise.
- Egg - Adds moisture and binds.
- Egg Whites - Adds additional moisture and binding to hold the bread together.
- Avocado Oil - Taste and moisture.
- Apple Cider Vinegar - Helps with rising and enhances the flavor.
- Hot Water - Adds moisture and helps activate the psyllium husk powder.
Frequently asked questions
While every recipe is different, generally, you can use 1 tablespoon of psyllium husk powder per ½ tsp. of xanthan gum. Like xanthan gum, it helps with texture, retains moisture, and prevents bread from crumbling. Unlike xanthan gum, it can lend a slight sourdough-like taste.
Typically, a bread roll has anywhere from 15 to 25 carbs. However, these are made with almond flour and only have five total carbs and two net carbs per roll!
🔪 Easy instructions
Step #1: Whisk together the dry ingredients. Set aside.
Step #2: Whisk together the wet ingredients in a separate bowl.
Step #3: Stir the wet ingredients into the dry, then add 1 Tablespoon of boiling or very hot water.
💭Tip: The hot water helps activate the psyllium. So, if you're using psyllium, don't skip it!
Step #4: Roll into six equal-sized keto rolls. Then, brush the tops with melted butter or oil and sprinkle with Italian seasonings or garlic powder for garlic dinner rolls!
Step #5: Bake at 375 degrees for 15 to 20 minutes or until nicely browned. Allow to cool completely for the best texture before serving.
Serving suggestions
These keto bread rolls are great served with butter, a keto caprese salad for a light lunch, or keto brown gravy. Or use them to make a sandwich or slider!

They can also be served as dessert with butter and low-carb maple syrup!
Storage instructions
These keto-friendly dinner rolls are best eaten the same day because they get soft after storage. However, they can be stored or frozen:
- Store: Place in an air-tight baggie at room temperature for one day or 2-3 days in the refrigerator.
- Freeze: Keep in the freezer for up to 3 months.
- Reheat: If frozen, thaw, then reheat in a 350-degree oven or in the microwave until heated through. Brush the tops with oil or melted butter to prevent drying.
Substitutions
- Almond flour is a unique flour and, unfortunately, cannot be substituted.
- Flax seed *may* be able to be substituted with 1 to 2 teaspoons of ground chia seed, but I have not tested this, so I can't say for sure.
- Xanthan gum can be substituted with psyllium husk powder. The instructions are on the recipe card.
- Eggs would be hard to substitute in this recipe because it calls for two egg whites to help with the binding without adding as much moisture as a whole egg. I don't recommend substituting the eggs.
- Avocado Oil can be replaced with any oil you prefer or melted butter.

Low-Carb Keto Dinner Rolls With Almond Flour
Ingredients
- 1 ¾ Cup Blanched Almond Flour - finely ground
- 1 Tbsp. Flaxseed Meal - I prefer golden for a lighter-colored roll
- ½ tsp. Xanthan Gum - OR 2 ½ tsp. psyllium husk POWDER
- ½ tsp. Sea Salt
- 1 tsp. Baking Powder
- 1 Large Egg
- 2 Large Egg Whites
- 1 Tbsp. Avocado Oil
- 2 tsp. Apple Cider Vinegar
- 1 Tbsp. Boiling/Hot Water
TOPPING:
- 1 tsp. Italian Seasonings - or as needed
- 1 Tbsp. Avocado Oil or Melted Butter - or as needed
- Garlic Powder - to taste
Instructions
- Preheat oven to 375 degrees and grease a small baking dish or pie pan.
- In a large mixing bowl, whisk together the almond flour, flaxseed meal, xanthan gum, sea salt, and baking powder.
- In a separate mixing bowl, whisk together the egg, egg whites, avocado oil, and apple cider vinegar
- Stir the wet ingredients into the dry then add the boiling or very hot water. Stir until well combined.
- Roll the dough into 6 equal-sized balls and place in prepared dish.
- Brush the tops with melted butter or avocado oil and sprinkle with Italian seasonings or garlic powder, if desired.
- Bake 15 to 20 minutes or until tops are golden brown.
- Allow the rolls to cool for the best texture. If desired, brush again with melted butter or oil just before serving.

This recipe did not work at all. I followed exactly except I added 2 more tablespoons of water. I give it no stars. Very disappointing. Maybe there is a misprint because there should be more liquid, I’m sad that I wasted all of the ingredients.

Oh no, I'm sorry!!! I make this recipe regularly (in fact, I made them again this morning!) and have never had a problem? Could you have accidentally used 2 1/2 Tablespoons instead of teaspoons of psyllium husk powder? If so, that would have made the rolls extremely dry! Sorry again that these didn't work for you.
