You'll fall in love with bread all over again after you try these Low-Carb Keto Dinner Rolls. Not only are they super quick and easy to make, but they're soft and tender with that classic "bready" taste. Plus, they're Paleo, gluten-free, and dairy-free too!

Bread. It's one of the hardest things to give up when going gluten-free and low-carb.
The smell, the taste, the texture. It's a favorite and a staple for many people. However, I'm here to tell you that you no longer have to give up bread!
These are by far the best almond flour dinner rolls I've ever tried and I'm super excited to share them with you today!
They have that classic bread smell, taste, and texture you've been missing! Plus, they're super easy to make.

Ingredients
Here are the easy ingredients that most keto folks already have on hand:
- Blanched Almond Flour - Keto, low-carb flour.
- Flaxseed - Low-carb flour, adds stretch and texture. Use the golden variety for a lighter-colored keto roll.
- Psyllium Husk Powder OR Xanthan Gum - Binder, keeps the low-carb rolls from being crumbly.
- Sea Salt - Enhances flavor.
- Baking Powder - Adds rise.
- Egg - Adds moisture and binds.
- Egg Whites - Adds additional binding to hold the bread together.
- Avocado Oil - Taste and moisture.
- Apple Cider Vinegar - Helps with rising and enhances the flavor.
- Hot Water - Moisture, helps active the psyllium husk powder.
Psyllium vs. xanthan gum
For this recipe, you can use psyllium husk powder or xanthan gum. I tend to prefer xanthan gum, but both are great!
If you've never used psyllium before, similar to xanthan gum, it helps with texture, retains moisture, and prevents the bread from crumbling. However, it also lends a very slight sourdough-like taste - which I love!
It can be found in most health food stores and is usually in the supplement section.
Also, be sure to use psyllium husk powder - not whole psyllium husks - as whole psyllium husks will not work in this recipe.
While every recipe is different, generally, you can use 1 tablespoon of psyllium husk powder per ½ tsp. of xanthan gum.
🔪 Easy instructions
Step #1: Whisk together the dry ingredients.
Step #2: In a separate bowl, whisk together the wet ingredients.
Step #3: Stir the wet ingredients into the dry, then add 1 Tbsp. of boiling or very hot water.
💭Tip: The hot water helps activate the psyllium. So if you're using psyllium, don't skip it!
Step #4: Roll into 6 equal-sized keto rolls and brush the tops with melted butter or oil and sprinkle with Italian seasonings.
Step #5: Bake until nicely browned.
How to serve
Allow to cool completely for the best texture before serving.
Then, serve the keto bread rolls as I side dish with butter and/or keto brown gravy.
Here are some main dishes that you can serve with them:
- Chicken Fried Steak
- Alfredo
- Chicken Piccata
- Lasagna
- Lasagna Soup
- Mushroom Gravy With Steak Or Chicken
They can also be served as dessert with butter and low-carb maple syrup!
Storage instructions
The low-carb dinner rolls are best when eaten the same day but can be stored in an air-tight baggie at room temperature for 1 day, 2-3 days in the refrigerator, or frozen for up to 3 months. Bread softens after being stored.
Substitutions
- Almond flour is a very unique flour, and unfortunately, cannot be substituted.
- Flax seed *may* be able to be substituted with 1 to 2 teaspoons of ground chia seed, but I have not tested this so I can't say for sure.
- Xanthan gum can be substituted with psyllium husk powder. The instructions are on the recipe card.
- Eggs would be hard to substitute in this recipe because it calls for 2 egg whites to help with the binding without adding as much moisture as a full egg. I don't recommend substituting the eggs.
- Avocado Oil can be replaced with any oil you prefer or melted butter.

Low-Carb Keto Dinner Rolls With Almond Flour
Ingredients
- 1 ¾ Cup Blanched Almond Flour - finely ground
- 1 Tbsp. Flaxseed Meal - I prefer golden for a lighter-colored roll
- ½ tsp. Xanthan Gum - OR 2 ½ tsp. psyllium husk POWDER
- ½ tsp. Sea Salt
- 1 tsp. Baking Powder
- 1 Large Egg
- 2 Large Egg Whites
- 1 Tbsp. Avocado Oil
- 2 tsp. Apple Cider Vinegar
- 1 Tbsp. Boiling/Hot Water
TOPPING:
- 1 tsp. Italian Seasonings - or as needed
- 1 Tbsp. Avocado Oil or Melted Butter - or as needed
Instructions
- Preheat oven to 375 degrees and grease a small baking dish or pie pan.
- In a large mixing bowl, whisk together the almond flour, flaxseed meal, xanthan gum, sea salt, and baking powder.
- In a separate mixing bowl, whisk together the egg, egg whites, avocado oil, and apple cider vinegar
- Stir the wet ingredients into the dry then add the boiling or very hot water. Stir until well combined.
- Roll the dough into 6 equal-sized balls and place in prepared dish.
- Brush the tops with melted butter or avocado oil and sprinkle with Italian seasonings.
- Bake 15 to 20 minutes or until tops are golden brown.
- Allow the rolls to cool for the best texture. If desired, brush again with melted butter or oil just before serving.

This recipe did not work at all. I followed exactly except I added 2 more tablespoons of water. I give it no stars. Very disappointing. Maybe there is a misprint because there should be more liquid, I’m sad that I wasted all of the ingredients.

Oh no, I'm sorry!!! I make this recipe regularly (in fact, I made them again this morning!) and have never had a problem? Could you have accidentally used 2 1/2 Tablespoons instead of teaspoons of psyllium husk powder? If so, that would have made the rolls extremely dry! Sorry again that these didn't work for you.
