Learn how to make soft, perfectly cooked keto scrambled eggs with cheese that aren't watery or overcooked and dry!
These cheesy scrambled eggs (served with crispy bacon!) are one of my very favorite keto breakfast recipes! They're quick and easy to make, filling, creamy, rich, and satisfying.
Plus, they're full of protein and healthy fat to keep you full all day, fitting perfectly into your keto diet macros for the day.
Ingredients
- Butter - I recommend butter over oil to infuse a nice buttery flavor.
- Large Eggs - If you use more or less, you will need to either increase or decrease the cooking time, respectively.
- Sea Salt & Ground Pepper - Seasonings.
- Shredded Cheese - Use any variety you like! While hand-grated cheese melts better, pre-shredded can also be used.

While this is a matter of preference, I prefer to make my eggs without whipped cream or milk. I've found that when cooked gently over low heat, my eggs are creamy and delicious without the need for cream or milk. I've also found that the added liquid can make you think that you need to keep cooking the eggs to cook off the liquid, but results in overcooked eggs that aren't as soft and fluffy.
When done, scrambled eggs should have a soft and creamy texture but still be slightly soft to the touch but not runny; moist but not watery. If you notice any liquid pooling in the pan, it's a sign that they are not done yet. You don't want them to turn brown because that means they are likely overcooked. Overcooked eggs can become dry and rubbery.
Depending on the brands, specific ingredients, and the type of cheese that is used, 2 scrambled eggs with cheese will have anywhere from 1 to 4 carbs.
Easy instructions
Step #1: Crack the eggs into a bowl. Then, add the salt and pepper. Whisk well.
Step #2: Melt butter in a skillet over medium-low to low heat. Pour in the egg mixture and allow to set for one to two minutes without touching it, or until you can see that the bottom of the eggs are starting to set.
💭Tip: Do not turn up the heat too high, otherwise the bottom of the eggs will become brown and overly cooked.
Step #3: Using a spatula, stir ONE time. Wait another minute, then stir one more time.
Step #4: Sprinkle the top with shredded cheese and wait one more minute. Then, stir once.
💭Tip: The trick to light and fluffy keto scrambled eggs is not stirring them too much! The LESS you stir, the fluffier they will be.
Step #6: Lower the heat if necessary, and flip the eggs over to ensure that they are evenly cooked.
Step #7: Cook for about another minute, or until done, and serve!
Storage
Keto scrambled eggs with cheese are best served fresh, however, they can be stored in an airtight container in the refrigerator for 3 to 4 days.
Freezing is not recommended because they will become watery when thawed and lose their taste and texture.

Substitutions
- If you use a different number of eggs, you will need to either increase or decrease the cooking time. If increasing the eggs, just be sure to keep stirring only ONCE every minute.
- Feel free to use any variety of shredded cheese you like - or even mix and match! I prefer to use cheddar because it has 0 carbs.
- If you have leftover bacon grease, use it instead of butter! It will infuse a delicious, salty, bacon flavor 😋
Variations
- Add any variety of meats and veggies! Such as ham, sausage, bacon, bell peppers, mushrooms, or anything else your heart desires!
- Make sure that anything you add is cooked to the desired doneness, then add them when you add the cheese. When adding extras, be sure to adjust your carb count as necessary 👍
Top tips
- Be sure to cook your scrambled eggs over medium-low to low heat. This allows for even cooking and prevents them from getting overcooked or browned too quickly on the outside while undercooked on the inside.
- Use a non-stick skillet or well-seasoned cast-iron pan to prevent the eggs from sticking.
- The trick to light and fluffy keto scrambled eggs is not stirring them too much! The LESS you stir, the fluffier they will be.
- Pre-shredded cheese has a weird coating that makes it harder to melt. While I don't always do this, if you're looking for ultra meltiness, be sure to grate your own cheese.

Keto Scrambled Eggs With Cheese
Ingredients
- 4 Large Eggs
- ¼ teaspoon Sea Salt
- ⅛ teaspoon Ground Black Pepper
- 1 Tablespoon Butter - or bacon grease
- ½ Cup Shredded Cheddar Cheese - or preferred variety
Instructions
- Crack eggs into a bowl. Then, add the salt and pepper. Whisk well.
- Melt the butter in a non-stick or cast-iron skillet over medium-low to low heat.
- Once melted, add the egg mixture. Allow to set for one to two minutes without touching it, or until the bottom of the eggs start to set. Be sure not to turn up the heat to hurry things along, or the bottom of the eggs will turn brown and be overcooked!
- Stir ONE time. This is important! The less you stir, the fluffier they will be!
- After another minute, stir ONE time again.
- Sprinkle the cheese over the eggs, and do not touch for another minute.
- Lower the heat if necessary, and flip the eggs over to ensure that they are evenly cooked. Cook for about another minute, or until done, and serve!
