Ingredients
Here are the simple low-carb ingredients:
- Xanthan Gum - Gluten-free keto thickener.
- Oil Or Melted Butter - To mix with the xanthan gum to prevent clumping.
- Broth And/Or Pan Drippings - if you have pan drippings, be sure to use them for added flavor!
- Worchestershire Sauce - You can’t taste it, but it enhances the other flavors of the gravy and adds depth of flavor and umami.
- Onion And Garlic Powder - Seasoning.
- Thyme - Optional, but adds a fantastic earthy flavor. Thyme is one of my favorite flavors!
- Butter - Adds flavor, richness, and a silky, velvety finish.
- Salt And Pepper - Seasoning.
With or without pan drippings
I wrote this recipe to be used with pan dripping or without pan drippings. However, if you have them, be sure to use them for added flavor!
If you make anything that results in meat drippings at the end, whether it’s pork, chicken, or beef, such as from a pot roast, be sure to save them to make this keto brown gravy. You can always pop them in the freezer for later!
Also, if you don't have drippings, I recommend using beef broth because it is the most flavorful. And don't worry, beef broth brown gravy pairs perfectly with poultry too!

Yes, it can! To make this dairy-free, use dairy-free butter. Just note that dairy-free butter tends to be saltier than traditional butter.
Traditional brown gravy is thickened with flour or cornstarch, making it not keto-friendly and, in most cases, not gluten-free. For example, 1 Tablespoon of a packet of brown gravy has 3.5 net carbs, which can really add up! This recipe, however, is thickened with xanthan gum and has 0 net carbs, making it keto and gluten-free.
Easy instructions
Step #1: Mix some xanthan gum and oil or melted butter in a small bowl. Set aside.
💭Tip: Always mix xanthan gum with a small amount of oil or melted butter before adding it to soups and sauces to keep it from clumping.
Step #2: If using pan drippings, pour the contents through a strainer or fine-mesh sieve over a bowl so that the drippings end up in the bowl. Discard the solids.
Step #3: Add all the ingredients except the xanthan gum mixture and butter. Bring to a gentle boil.
This includes broth and/or pan drippings, Worcestershire sauce, onion powder, garlic powder, and ground thyme (if using).
Step #4: Add the xanthan gum mixture to thicken. Whisk constantly until thickened, 2 to 4 minutes.
Step #5: Remove from heat and swirl in cold unsalted butter for a smooth, velvety finish and richness.
This is a technique that chefs use called “Monter Au Beurre.”
Step #6: Season the low-carb gravy with salt and pepper. Serve immediately.
Storage instructions
- Store: Store covered in the refrigerator for 3 to 5 days.
- Freeze: Freeze in a freezer-safe container for up to 3 months.
- Reheat: Reheat in a skillet over medium heat, whisking constantly. If frozen, thaw and bring to room temperature before reheating.
Optional ingredients
- Sauteed Onions and/or Mushrooms. Saute at the beginning with a little oil or butter, then add the broth and remaining ingredients and continue with the recipe.
- Fresh Herbs such as rosemary, sage, and/or thyme. Add at the end of cooking.
- A pinch of Dijon Mustard.

- 2 Tablespoons Cold, Unsalted Butter
- Sea Salt - to taste
- Ground Pepper - to taste
Instructions
- If using pan drippings, pour the contents through a strainer or fine-mesh sieve over a bowl, so that the drippings end up in the bowl. Discard the solids.
- In a small bowl, combine the xanthan gum and oil. Set aside.
- Add the broth and/or pan drippings, Worchestershire sauce, onion powder, garlic powder, and ground thyme (if using) to a medium-sized saucepan. Stir to combine.
- Bring to a gentle boil.
