- Oil: For sauteeing the veggies and chicken. Use any cooking oil you prefer.
- Hoisin Sauce: I prefer to make my own; it's a simple blend of common low-carb ingredients that can be whipped up in no time! I don't recommend store-bought because it's usually pretty high in carbs and isn't always gluten-free.
- Mushrooms: Mushrooms add texture, bulk, and flavor. Feel free to replace them with chopped zucchini or another similar vegetable if you don't like mushrooms.
- Shredded Carrots: These add flavor and a subtle sweetness. While carrots aren't always considered keto, there is only ยฝ cup in the entire recipe, so they add minimal carbs.
- Water Chestnuts: These add crunch and texture. They are, however, a bit high in carbs, which is why there is only ยผ cup. Feel free to omit them or replace them with peanuts to make the dish lower-carb.

Step #1: Mix together the hoisin sauce ingredients and set aside. And you don't need to heat it, whisk all the ingredients until it's well combined!
Step #2: In a large skillet, wok, or Dutch oven, saute onion and mushrooms.
Step #4: Add some garlic and cook until fragrant. Then add the ground chicken and cook until browned.
Step #5: Add shredded carrots, ginger, hoisin sauce, and water chestnuts. Cook until heated through and serve in lettuce cups.

While I love these Asian chicken lettuce wraps as-is, here are a few other ways to serve them:
- Serve alongside some cauliflower rice made into keto fried rice by adding some coconut aminos and scrambled eggs.

Keto Chicken Lettuce Wraps
Ingredients
- 1 Recipe Hoisin Sauce
- 1 Head Bibb Lettuce - leaves gently removed from stem
- ½ Cup Shredded Carrots - about 1 large carrot
- 2 Tablespoons Avocado Oil - or cooking oil of choice
- ½ Medium Onion - diced
- 8 Ounces Mushrooms - chopped
- 1 Clove Garlic - minced
- 2 teaspoon Ground Ginger
- 1 Pound Ground Chicken - or pork or beef
- ¼ Cup Water Chestnuts - optional, chopped into bite-sized pieces, not included in nutritional information (or peanuts for lower-carb)
- Sea Salt - to taste
- Ground Black Pepper - to taste
- Sesame Seeds - for garnish
- Green Onions - for garnish
Instructions
- Vigorously whisk together the hoisin sauce ingredients and set aside. No need to heat it, just whisk the ingredients until well combined, being sure that the peanut butter is well dissolved!
- Chop the end off of the lettuce, then peel away the leaves. Wash and thoroughly dry the leaves and set aside.
- Use the grater attachment of a food processor or a hand grater to grate the carrots. Set aside.
- In a large skillet, wok, or Dutch oven, heat the oil over medium heat. Once hot, add the onion and cook until soft, around 3 minutes, then add the mushrooms, breaking up the mushrooms with a wooden spoon as they cook. Cook another 3 minutes, or until the onion is translucent and the mushrooms begin to soften. Add the garlic and cook for 30 seconds, or until fragrant, stirring constantly.
- Add the ground chicken. Cook, crumbling with a spatula or wooden spoon, until browned. Drain the fat in a colander if desired, but do not rinse. Add the shredded carrots and cook, stirring constantly, until carrots begin to soften, approximately 3 minutes.
- Pour ยพ of the prepared hoisin sauce into the ground chicken mixture, reserving the rest for serving. Stir until ingredients are incorporated, then add the water chestnuts, if using. Cook for 3-4 minutes, stirring constantly, then remove from heat. Season with salt and black pepper to taste. Serve hot in bibb lettuce leaves garnished with sesame seeds and green onions.
