What are country-style ribs?
Surprisingly, country-style ribs aren't actually ribs at all! They come from near the shoulder area and are cut from the center and blade portion of the pork loin.
The ribs are usually boneless but if they do have a bone in them, it is the scapula or shoulder blade.
They are still called ribs because they are similar to standard ribs in terms of flavor and consistency.
Sugar-free bbq sauce
I recently discovered Baby Ray's Sugar-Free BBQ Sauce, and it's AMAZING!!! It's the only store-bought keto BBQ I recommend because it doesn't have a weird sugar-free aftertaste.
If you prefer homemade, I like this Keto BBQ Sauce from All Day I Dream About Food! It's easy to make and tastes just like the kind I grew up on.
But feel free to use any low-carb BBQ sauce that you prefer.
Why boil country-style ribs
To make the country-style ribs tender, they need to gently simmer for around 45 minutes to an hour.
This softens and tenderizes the meat. I do not recommend cooking them at a full boil, though, as this will make the meat tough.
After they have simmered, there are two options. You can either:
- Cook the ribs on the grill
- Or cook them in the oven
Grill
After they have simmered, melt together ยผ Cup of butter, non-dairy butter, or ghee and 1 Cup of BBQ Sauce.
Place the ribs on the grill over high heat and grill the ribs for around 20 minutes, basting with the BBQ mixture and turning frequently.
Bake
If you prefer to bake the ribs after boiling, simply place them in a large casserole dish with melted butter and BBQ Sauce.
Ensure all the ribs are well coated with the BBQ mixture and cook at 325 degrees covered for 30 minutes. Then, remove the cover and cook for an additional 30 minutes.
And that's it! Perfect, flavorful, and tender BBQ Country Style Low-Carb Ribs!!!

Storage instructions
Leftover keto ribs can be stored in the refrigerator for 2 to 3 days or frozen for up to 4 months.
Substitutions
These are gluten-free, low-carb, and keto. However here are some substitutions to make them fit more diets:
- Paleo And Whole30: Use Primal Kitchen or Tessamae's BBQ sauce and replace the butter with ghee.
- Dairy-Free: Use dairy-free butter.
Top tips
- My favorite BBQ sauce is Baby Ray's Sugar-Free BBQ Sauce, but use any you prefer.
- When choosing butter, I always choose grass-fed butter because it tastes so much better. It’s also way healthier, having vitamin K-2 and good fats. However, you can use any butter that you prefer.
- Be sure to simmer the pork ribs and do not cook them at full boil, as this will make the meat tough.

Celeste Reed-Smith says
Who knew that boiling ribs would make them more tender? Great idea. I would think it would work for chicken as well. The chicken here in Belize tends to be very tough even when I slow cook it in a crock pot. Im going to try it. Thanks for sharing!
